Turkish milk caramel cake / Trilece


We live in an era where we cannot expect anything . Something can happen anytime unexpected. I woke up Sunday morning...well Sunday it's fine day . Just clean and do the usual stuffs . And it rains heavily ...dark and sombre look ..It gets cozy and I hate it coz all my work gets piled up and loads of laundry is just looking at me and I am wondering when will I finish all this. Faizan who loves the rain took his umbrella and was screaming at the rains with joy.. he just loves it. I couldn't stop him .let it be... He is enjoying himself ..let him ... I felt it...we never had the chance to enjoy such moodiness ... suddenly I heard  a rumbling sound ... I was cleaning the first floor ...my heart sank.. I didn't know how I reached in seconds .. I couldn't see Faiz..but all that was visible was our backyard wall just rummbled down...it was pouring out heavy...Faizi ran inside on hearing thiis sound.. he didnt look back what had happened. My grandma would say oh that's not good .. somethg is going to happen. Well we don't have that faith in us.   So we just stayed mum. AJ just came and we went for lunch from a wedding that we had to attend .. no mood still raining and full clogged roads. Granada words ringing in mind still and I still say no faith ok,we didn't believe then and not going to the least to  believe now . We went along and met a few lovely relatives friends,long forgotten neighbours and enjoyed the food just to return back home to see my husband suddenly packing for a tour with friends to Bangalore . I didn't know and I hate last minute notices especially from the person u sleep with just takes off.... Just like that ...well ...I was actually cheering inside because I wanted to be free. I don't know what's that feeling called ... I Am my own boss but suddenly I just don't want my husband around me for for days ... 

I was all in Glitterati. I think after 15 years of togetherness will bring u to this moment ...may be not for all but certainly for me now ..only for now I wanted to be alone ...a frozen time ..that's all. Grandma's words still  ringing in mind 
Today's recipe is a milky cake recipe . I love bakes that are easy and never boring . It's so easy and especially if u have sudden parties then  this is the recipe for u . I saw this cake displayed on a party table..and I loved the name actually. On contact with the person who made this ,gave me the credits to shabosphere . And I must say what a space that was. Her dishes are drooling and so is her Instagram.

Ingredients

For the cake
1 cup plain flour
1 cup sugar
4 eggs
1 tablespoon vanilla extract
A pinch of salt
1/2 cup oil
1 tablespoon baking powder

For the milk mix
2 cups milk
1/2 tin milkmaid
1 cup cream

For the caramel
1 tablespoon butter melted
1 cup sugar
1 cup cream warm
Cashews for decor.

Method
Preheat oven to 170 degree
Prep up baking pan with parchment paper
In a blender beat the eggs and sugar to yellow pale batter .
Add the vanilla extract, plain flour,oil baking powder.
Beat for 5 minutes.
Fill up the pans and bake for 25 to 30 minutes.
Once baked cool and remove the parent paper .
Mix all the ingredients for the milk mix and pour warm onto the cake .
Let it chill for 10 minutes.
Caramel sauce
Melt butter.
Add the sugar and keep stirring to orange colour.
Add the cream and keep stirring well.
Place cashews on the cake and pour the warm caramel on the cake .

Majboos recipe/ Arabic recipe



It's cold and showers are non stop in our region. I am loving the rains and early  mornings just don't want to get out of bed. My kids have started there regular classes. All three in three different schools for the first time in life and I am all messed up. All leave at the same time. And pushing them out of the house is the toughest part. Girls are always punctual .. zehna is all set while it ticks just 10 minutes before her bus time. She uses the local transport and so she is always out right on time. But the boys are giving me a really tough time . I am exhausted by the time they all leave and the house is quiet. House comes to a stand still ...that's self time for me if I am on leave from workplace .
Today I am sharing a recipe. It's a novelle recipe from Arabic cuisine. Majboos is famous in the Arab world..we have so many variations but this one is my favourite. I have tried soo many and this turned out well for me .
We don't always make it but we love to have to when everyones tired of the usual Biryani.
Try it out ...hope it turns good for u.
Oh by the way .. it is super easy.. the Arabs have a quick way for everything...I guess.


Ingredients

  • 2½ cups long grain rice (any brand will do.)
  • 4 chicken breasts , diced
  • 1 teaspoon Garam masala mix .( 1 clove,2 cardamoms,1 cinnamon stick, 1 bay leaf 1/2 teaspoon cumin seeds, 3 pepper pods)
  • 2 onions , finely chopped
  •  1/2 teaspoon garlic paste
  • 2 slices dried  lemon
  • 2 large tomato , peeled and seeded
  • 11/2 teaspoon ginger paste
  • ½ teaspoon ground cinnamon
  • A pinch saffron , infused in warm water
  • 10 pods cardamom , crushed
  • 1 teaspoon ground turmeric
  • 1 tablespoon garam masala
  • 1 tablespoon Arabic Masala.
  • 1/2 cup diced potatoes
  • 1/2 cup diced carrots.
  • ½ bunch cilantro , chopped
  • 4 tablespoons pine nuts , roasted
  • Olive oil
  • 2 cups boiling water
  • Salt
  • Pepper
For the raita

  • 1 cup plain  yogurt
  • 1 cucumber , peeled
  • 2 pods pepper crushed.
  • A few mint leaves


Method

Chicken Majboos

  • In a little olive oil over medium heat,
  • Add the whole garam masala and add the onions. Stir fry till slightly brown. Add the ginger and garlic pastes. Stir well.
  • Add the chopped potatoes and carrots.
  • Add all  masalas powders./Arabic
  • Add the chicken , saffron, preserved lemon, tomato. Cook till done.
  • Add salt and pepper.
  • Stir regularly for 3 minutes, then add boiling water.
  • Finally, add the rice and mix well.
  • Sprinkle cilantro and pine nuts and serve.

For the raita
  • Mix all ingredients and chill before serving.

Protein shake


Rains ... Yes today rains have poured its glory on the beds of Kerala. Freezing temperatures and cozy winds and I am loving it . I still cannot believe that Ramadan is over and we are back to yet another routine work schedule. Time flies and so do our best of experiences. It feels good as  like monsoons have just started and we are going to have a six long months of showers on and off. Eid went smooth and we went abide with comfort and kids complaining next time we should have a trip organised for the upcoming Eid. Travel is going to be tough though. The main reason was that from long we have done travelling as a family and during monsoons it's tough to handle kids by me. I just cannot handle all three in one go.
Today's recipe is an energy drink. It's a super drink. My son have after the gym . It's his favorite and he would have a full jar .  It's tummy filling so try it out. It's packed with protein and fat. He's very lean so it's ok for him to have but I just had a simple tablespoon . 

Ingredients

  • 1 cup almond milk
  • 1 tbsp creamy peanut butter
  • 1 ripe  frozen banana chunks
  • 1/4 tsp ground cinnamon for flavor.
  • 1 scoop chocolate protein powder
  • 5-10 ice cubes if you want to thinner the quantity

optional: 1 tsp. honey

Method

  • Blitz all together to thickness that u would like.
  • I added a little more almond milk. But anyways works better.

Green chutney


Our vacation is over and so is the blessed month . We are having just two days more for the Eid holidays to get over. Tomarow is Eid for us . Many are celebrating Eid today too in some parts of the world . Wednesday and Thursday are the official leave for us. But one day for private sector. Going back to work and school is going to be like stretching our legs out there . Kids had a calm Ramadan as the schools were closed the whole month. It's the new academic year for them. So they really needed a vacation well deserved.

It has started to rain here but no rescue from the heat and the humidity. We will be going for Eidgah in the morning and a visit to my in-laws are staying close by. ,. Kids want to go out somewhere..but I am guessing we all will be just visiting our relative houses. I am pressing more on having a calm Eid ..as our house will be pouring with guests. Zehna doesn't like it indoors for Eid.  She loves travelling and she always see to it we don't doz off during Eid .
Today's recipe that I am posting is a basic green chutney . I use for the wraps thats mostly packed with tiffins. Cold chutney with simple bread and cheese ia good combo and old past street food . Here's the recipe .

Ingredients

  • 1 cup corriander chopped
  • 1 cup coconut grated
  • 3 green chillies
  • 1 teaspoon yellow lentils/dal.
  • 2 Garlic pods
  • Salt to taste


Method

Grind all the ingredients into a  fine mix adding little water.
Serve with Vadas iddlies and poories too.

Irani pola/ Ramadan recipes




How fast everything flies by ..  the year is half and  it's really sad to say the most precious month is gone by . Alhamdulillah we are blessed to have this month in our lives. Life is so short and doing good to others and ourselves should be the top priority. I  try to bring the kids along with the flow. But it's tough as a parent I n many ways . I have to deal with three kids of which two are already are teens. And ist scary at times. How fast they grow in this world . It's stressfully I keep pace with  flow with their needs. And it's like I cannot catch the breath with them. This Ramadan hadhits toll on my health immensely. Being the reason I couldn't blog much.. i look at it as a deep break in life.


 My taste is drifting  more towards savoury spiceless recipes. I love blant food just like babies. ,,. Pepper is favorite one now. I love to have it in all my curries and pasta which brings me to this new recipe for today . Irani pola ..
What's with the name ? i really have no  clue as yet  but this is a trendy Malabar dish now and occasionally its with spicy red masala. I have changed that with white saucy chicken filling and its delicious.


Ingredients

To blend

1 cup plain flour
1/2 cup vegetable oil
1 cup milk
2 small eggs.
Salt to taste
1 teaspoon white pepper powder.

Filling
1 tablespoon butter
200 gms chicken boneless cubed.
1 teaspoon Ginger garlic paste.
1 tablespoon green pepper finely chopped
1 tablespoon Yellow pepper finely chopped
1 tablespoon red pepper finely chopped
2 tablespoon mushrooms finely chopped
1 teaspoon spring onion finely chopped
1 teaspoon red chilli flakes
1  teaspoon pepper powder
Salt to taste
1 bay leaf and green chilli

White pasta sauce
1 teaspoon butter
1 teaspoon garlic chopped
1/2 cup milk
1 tablespoon plain flour
Salt to taste
1/2  teaspoon red chilli flakes
1/2 teaspoon pepper powder

Method
Heat butter in a saucepan. Add garlic and just stir till raw smell disappear.
Add the flour. Stir quick on low flame. Careful not to burn the flour. Off the flame.
Add the milk and give it a mix and quick stir till no lumps are formed.
Turn on the flame and add the spices.
Turn off the sauce once it thickens
Set aside.
Heat butter. Add the chicken, add 1/2 teaspoon pepper and salt . Just cook til done. Add rest of  the ingredients. And cook till just done. Do not over cook . Discard the bay leaf and the green chillies.
Add the white sauce  which should just coat the ingredients. Mine measured to half cup sauce.


Blend all the ingredients mentioned under blend .
Heat another pan with a dash of ghee.
Pour half of the thick batter into the pan.
Cover cook for 5 minutes .
Add filling on top. And pour rest of the batter to cover the ingredients evenly.
Decor top with corriander leaves , left over colorful pepper rings .
Bake it under medium flame.
Bake for 1/2 an hour, or till toothpicks inserted comes out clean . 
Irani polas are served cold .. reason being it will harden with time .

Notes .
Do not add to much white sauce as it will become mushy and the feeling of it not cooked well creeps in.
The only spice ingredient is black pepper.
And do not forget to place a plate under the pan for baking otherwise you will have burnt layer underneath the bake finally.
Just coat the chicken with white sauce as needed. Don't over do it.
