Prawns masala addas\ Ramadan recipes 1






Asalamualaikum . Welcoming Ramadan for this year with so much gratitude and happiness . As for this holy month , I have seen some changes and that's how people are greating Ramadan this year with love and affection. It's not only the food but more focus is on the iftar giveaways and donations in the work camps , labour camps.  With the cleaning and among the other prepping for this  Ramadan I decorated my home too. But also we as a family have decided to work on more charity and learning more on Quran and it's history. Getting the kids wake up for suhoor is a task I really cannot handle... But my 5 year old wakes up and has a little of the yummies that's we make for suhoor . He loves the idea of waking up and having something to eat and pray fijr prayer. He calls that fasting in Ramadan. Though he threw tantrums for fasting this Ramadan...keeps an alarm and wakes up to the dot ... No fuss at all  and it's overwhelming when he comes down to eat and pray.  I guess he sees our excitement and wants to be a part of it too .

Now coming to the recipe . This month I will be focusing on recipes than the notes that I write to you ,. Today is our tangy and spicy prawn masala addas . Very filling and adding a little more tomatoes bringing the juicy prawns and spiciness out to explore your taste buds. Here's the recipe as follows...

Ingredients

  1/2 kilo prawns deviened  and cleaned.
  2 onions chopped finely
  3 tomatoes chopped finely
  1 green chilli
  Curry leaves
  Corriander leaves
  1 teaspoon Ginger garlic paste
  Salt to taste
  1/2 teaspoon turmeric powder
  1 teaspoon chilli powder
 
For the rice dough

1 cup rice , soaked in boiling water for 4 hours .
Salt to taste .
1 /2 cup rice flour 

Method.

Grind the rice in little water to a thick batter ( like iddli batter)
Add salt.
Add the flour and make a smooth dough .
Heat the pan and add coconut oil.
Add the onions and fry till light brown .
Add rest of the ingredients and saute well .
Flatten the dough to size of the palm . Spread the masala evenly and cover fold the dough to half . Steam cook till done .
It took me half hour to cook the rice dough.

Banana roll ups | Ramadan snack


Time just flies and we already into the middle of Ramadan.
Our goal is to fast the month of Ramadan for spiritual purification and out of obedience to the orders of Allah SWT.  However, verse 2:184 ends with the statement that

                            “for to fast is to do good unto yourselves - if you but knew it.” 

Out of God’s mercy, it turns out that when we fast, we are not just gaining spiritual benefit, but doing good unto ourselves in the physical realm as well.  So much so, in fact, that fasting has become a new vogue in medicine to help people maintain good health and longevity.  This lecture series uses the most recent medical literature to do a fairly in-depth exploration of the health benefits of fasting.  These benefits include improvements in weight, glycemic control and reductions in the risk of diabetes, decreased cardiovascular disease risk factors, improvements in immune system function, decreased cancer risk, and better neurological and brain health.
This ramadan is going to be just simpke and easy snacks.  Keeping it and light and healthy to the brim. Here i have preferred to get the best way to attain simplicity with just four main ingredients.
Try it out .. its great for a sweat slider .


Ingredients


1 ripe banana ( plaintans )
8 large slices of bread
1/4  teaspoon crushed cardamom .
2 tablespoon sugar
2 eggs
3 tablespoon milk
A pinch salt
2 tablespoon ghee

Method

Mix the eggs ,milk ,sugar ,cardamom powders and salt into a thin batter and keep aside .
Slice the banana length wise and shallow fry  in ghee .
Flatten the bread slices .
Note that the banana  slices should be the same size as the flatten bread slices.
Place the ghee fried banana slice on the single flattened bread .
Sprinkle some sugar and roll them up .
Now dip the rolls into the egg batter and shallow  fry to slightly golden color in ghee .
Sprinkle some sugar on the hot rolls .

Vegetable egg croquettes

This croquette is a sure tummy filling and has a lot of mixed vegetables ,eggs and breadcrumbs to combine it all. Its simple ingredients and i always rate this snack as one of my favorite. 
As my kids are at a threshold of hunger spike i have to make a snack for tea . I love snacking  as malabar , especially Kannur, is a huge hub for their snacks . We love preparing chai kaddis (tea snacks ) . Even kitty tea  parties are  trending in our society.  So however tedious work goes into preparing kaddis , every party will be loaded with new varieties. 

These egg and vegetable croquettes  are spicy treat especially when u have guests coming around . Either way my kids love anything thats just tastes  cutletty 😉. 

Ingredients 

  • 4 eggs boiled
  • 3 large potatoes, boiled and skin off.
  • 1 onion chopped finely 
  • 2 cups mixed vegetables.
  • 1 teaspoon Ginger and garlic paste 
  • 3 Green chillies chopped 
  • 1/4 teaspoon Turmeric powder 
  • 1/2 teaspoon pepper powder 
  • Curry leaves and corriander leaves chopped
  • Salt to taste

For dipping :
  • Breadcrumbs 
  • Eggs 

Method 
  • Cut the potatoes into half and boil  
  • with skin on for 3 whistles  . Once cooled  ,peel the potatoes and smash.
  • Add 1 tablespoon coconut oil and saute the onions . Now Add in the green chillies ginger garlic paste and  Cook for 3 minutes. Add all the powders.   Add the vegetables and add salt , cook till done. Check the salt and add green chillies if needed.  Add the leaves . Allow to cool .
  • Once it is all done transfer to a large bowl ,add the  potatoes and mix well . 
  • Cut a  boiled egg lengthwise into 6 slices .
  • Now gently coat the egg slices with the potato masala.  
  • Ensure to coat the eggs covering all sides. It will take a cylindrical shape .
  • Dip in the eggs generously and coat in breadcrumbs.
  • Fill a pan with oil . Once hot enough, add the croquettes carefully frying  till golden brown all sides .
  • Serve with hot chilli sauce or with hot chai as i had mine . 
Note :
Check the salt after the masala is done .
These croquettes taste better when its spicy .
While shapping have patience as it tends to break if it doesn't take a proper cylindrical shape around the eggs .
