Cucumber coconut chutney


As the year I sending I am feeling a little down. The reason I think is we are moving so fast now . Where has the January and June ...go...we had a terrible six months of rain scare . Our area almost flooded . The was no electricity in some parts but Alhamdulillah we were safe to this regards. Now it seems we are going to have it every year. And In between all this scariness my mum says by 2050 Kerala will be underwater  . Climate took its toll on us as the heat was also solid . It was never this hot than last the  few years . Anyways every day passes by and we pray for good health.
I have never skipped chutney for Friday's Biryani. And this is so much a favorite for us. 

I personally love the garlic smell in the chutney and adding one green chilli is really spicy for us but that's what we need with achhar .I have atleast four achhars now. Pappaya,lemon mango and tamarind, on my table . Biryani is not complete without the condiments . Some serve pappadam  raita pickle and chutney . AJ wants all of this infrontt of him if he is having his Biryani.
I prepare this chutney for  my Biryanies

Ingredients
  • 1 grated cucumber
  • 1/2 grated coconut fresh
  • 3 cloves garlic
  • 4 curry leaves
  • 1 green chilli
  • A pinch of salt
  • A pinch of mustard seeds

Method
  • Grind all the above mentioned ingredients to a smooth paste.except for the cucumber and salt.
  • Did not add water
  • Transfer to bowl.
  • Add the cucumber grated into it.
  • Add salt now and mix well
  • Serve immediately.

Coconut chutney


For the past one  year, I’ve been addicted with the topic of confidence — to process how to get it,raise it, and  keep going till I achieve it. I grew up with fear of myself being highly insecure about everything. My urge to be confident really took hold when I  strikingly saw people like coaches who  take guidance for  clients who are really  smart and highly accomplished professionals. Though achievers,they still have thoughts like carrier imbalance, never enough attitude , aftaid to start from scratch and still they do try to move on withiuy that inner voice shouting ' yes u can'.
For me ,embarking on a professional or personal goal with the voice on one side saying 'you're not going to make it ' ,this is stupid enough to handle' or ' it's just a waste of time ' familiarizes with everyone... right?
Common advice is just  push these thoughts away. Encourage you're self  to keep hustling, try harder and If you’re like me, who thinks 100 times cautionary with non stop pushing to achieve more, you’ll lose your edge feeling , your health is going  to break out  and blah blah  thoughts...say  Cue to majestic  thinking.ok!!
. Well There’s also nothing wrong with wanting to be confident and ambitious. Problems are there to perfect us and we are there to survive it . They arise and we are fragile humans with the task of achieving fast. ...want to reach everything fast and in the process we get  and self-criticism.
The good news is  it that it’s possible to be find inner peace. You do this by inculcating  self-compassion instead of striving after higher self-esteem.
This is our routine coconut chutney recipe ..
Our Sunday special for years ...enjoy the recipe and for those beginners and  for those who don't like sour taste of curd included ...this is for u .

Ingredients:
1 cup Coconut grind
2 green Chilli
1 inch Ginger piece
4 Garlic cloves
1 bunch corriander leaves
1 tablespoon Yellow gram
Salt to taste 

For Tempering:
1 tablespoon Coconut Oil
1 teaspoon Mustard Seeds
1 teaspoon Urad dal
1 sprig Curry leaves
2 tablespoon Onion or Shalllots 

Method:
Take all ingredients for blending in a mixer, add some water and blend it to a smooth paste.Transfer this to a bowl.
Now heat oil in a small kadai. Add in all the tempering ingredients and saute for a min or till the onions turn golden.
Pour this over the chutney and mix well.
Serve.

Green chutney


Our vacation is over and so is the blessed month . We are having just two days more for the Eid holidays to get over. Tomarow is Eid for us . Many are celebrating Eid today too in some parts of the world . Wednesday and Thursday are the official leave for us. But one day for private sector. Going back to work and school is going to be like stretching our legs out there . Kids had a calm Ramadan as the schools were closed the whole month. It's the new academic year for them. So they really needed a vacation well deserved.

It has started to rain here but no rescue from the heat and the humidity. We will be going for Eidgah in the morning and a visit to my in-laws are staying close by. ,. Kids want to go out somewhere..but I am guessing we all will be just visiting our relative houses. I am pressing more on having a calm Eid ..as our house will be pouring with guests. Zehna doesn't like it indoors for Eid.  She loves travelling and she always see to it we don't doz off during Eid .
Today's recipe that I am posting is a basic green chutney . I use for the wraps thats mostly packed with tiffins. Cold chutney with simple bread and cheese ia good combo and old past street food . Here's the recipe .

Ingredients

  • 1 cup corriander chopped
  • 1 cup coconut grated
  • 3 green chillies
  • 1 teaspoon yellow lentils/dal.
  • 2 Garlic pods
  • Salt to taste


Method

Grind all the ingredients into a  fine mix adding little water.
Serve with Vadas iddlies and poories too.
