Beef chilli recipe


This is one recipe I am not going to differ on. I will keep this recipe for generations to come just because it's authentic and tastes really good . Why would I make a difference in such recipes . My mom cooks a different version and I recently added few weeks ingredients here and there and it was yummy ! Fridays is just another wonderful day where I get to cook really good Malabar dishes. So this Friday was just niter happy day with beef curry ,beef Chilli recipe and ghee rice . My boys love beef and they dig deep into the small batches that I prepare for lunch. There will not be any leftovers for us to carry on to dinner. But no worries they enjoy every bit. I think this is my first chilli recipe on blog too.
Before  I go on the hike to my praises. I must say my cooking sometimes is a reck and it's not that appealing also . My mind and health all depends on my mood. If the family needs some good finger licking food then  they have to make me happy..I hate that part of me ..I cook best when I am so warmed and delighted. This beef chilli made my day..one of my boys did well at school and received a certificate and i was so happy. He loves beef and so I made this chilli recipe for him .

But as I said somethings have to go wrong in patterned life . After making a lively lunch , that's when the husband calls and tells he won't be for lunch which of course is annoying. So I put aside the beef chilli for home for dinner . For me when I make something new I expect...no i want a praise from him and since I expected too much I didn't get it , instead he asked why I cooked beef chilli and beef curry at the same time , ...I just told him I am experimenting a lot of things for this month so watch out what's coming out on the table ..  instant reaction to dumb question.
Here's the recipe for this beef chilli which I am sure you guys will love as did I ❤️

Ingredients
  • 1/2 kilo Boneless beef
  • Salt to taste
  • 1 tablespoon Ginger Garlic Paste
  • 4 tablespoon Coconut Oil
  • 1 small Cinnamon
  • 2 teaspoon Fennel Seeds
  • Few Curry leaves
  • 1 onion  large chopped finely
  • 6 garlic cloves peeled
  • 2 tomatoes large chopped finely
  • 1 tablespoon Kashmiri Chilli powder
  • 1 tablespoon Coriander Powder
  • 2 teaspoon Cumin Powder
  • 2 teaspoon Garam Masala Powder
  • Salt to taste
  • 2 teaspoon black Pepper Powder
  • 1/2 capsicum chopped
  • Coriander Leaves a handful chopped


Red paste :
  • 5 garlic  cloves
  • 5 Dry Red Chillies

Method
.
  • Grind the red chillies and garlic to paste .keep aside .
  • Grind chillies  garlic to a paste.
  • Heat oil in a kadai, add in  spices,  curry leaves.
  • Add in onions and garlic. Cook till colour changes to Golden shade.
  • Now Add in tomatoes and chilli garlic paste and saute well. Cover and cook till well done
  • Add in all spice powders and salt ,cook for 10 minutes
  • Now add in beef  and mix well.
  • Simmer on low heat for two minutes. Add 1/5 cup water and cover pressure cook till beef is done.
  • Open and cook till water dries up .
  • Add in capsicum and cook till semi soft.
  • I love to crumch on the green peppers
  • And coriander leaves which I added 'a bunch '.
  • Serve.

Beef burger recipe


I always wanted to have beef or chicken burgers stocked in fridge. They are the best means for kids non vegetarian easy way of snacking ..at least even I can have . I am almost 75% vegetarian foodie and it's only at times I love chicken or beef. So recently after Eid ...I decided to try it out. I made  homemade beef patties and stored but it got over so fast . Definitely not worth the effort I put in . Mincing beef at home was a tasky effort. I took 2 kilo and we all had  three fullfiling burgers each. But I wanted to store  more for a week. ,But I guess all got so greedy for it was after all he homemade. Will try chicken version soon and let us know how that turned out as well.

Ingredients
2 kilo mince meat ( family of 5 members )
1 eggs beaten
1 teaspoon Red chilli powder
1 teaspoon ground black pepper
1 teaspoon salt
1 teaspoon cornflour.
1 teaspoon garam masala .

Method
Mix all the ingredients and rest for one hour.
Make small hand size patties and make them 1 inch thick. Makes dent in centre
Shallow fry both sides for 5 minutes till done .
I used homemade Mayonnaise  for the filling ..along with tomatoes cucumbers onions and lettuce if available.

Irrachi varrttyathe/beef roast recipe


I have cooked this recipe many times and it's always a winner . It's a little different style of masala and the beef is loaded with pepper powder. The coconut is the essential part of the recipe. I prepare this for party and all other occasions as  well.. 

Recently for Eid I was terribly  missing this beef fry  but as it turned out, I had nothing to go with  in my pantry and somehow I wanted to try it out with the buttery buns as they do in some eateries. It was then suddenly I was reminded I had taken a shot of this recipe for a friend and why not post it now . It is  delicious and  I have made beef roast many times. It is always the easiest to select since it is always well accepted. This is one recipe that can be made in so many ways like .

Today, I am sharing the recipe of how to create a marvelous perfect irrachi varrttyathe . Wow ...now I am feeling it. The Malayalam version of the way the words came out of me .. that is stronger than the transalation.  This recipe follows the same works of prepping up for the fries .. normally I dimp everything to the cooker and then reduce the liquid content and add ghee and coconut oil . But once I started with  this recipe. This is always what I have been influenced by and  added little more chillies and peppers to the final product  pepper powder always gives a much more scent to the beef. The end result you get is a melt-in-mouth cooked to perfection that you can’t stop with one or two gobbles . It is really addictive, so make sure you share it!  Off to this simple recipe sorry for the not so ok click..i am still in hangover of the fever.
Ingredients:

  • 1 kg beef cubed and cleaned well
  • For grind Masala:
  • 3 tablespoon Coconut Oil
  • 3 Onions sliced thinly
  • 2 Green Chillies
  • Curry leaves a big handful
  • 4 cloves garlic chopped
  • 1 "  ginger chopped
  • 2 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon corriander Powder
  • 1/2 teaspoon chicken masala powder
  • 1/2 teaspoon jeera powder
  • 1 tablespoon Garam Masala powder
  • Coriander Leaves a handful chopped finely

For Roasting:
  • 2 tablespoon Coconut chips
  • 3 tablespoon Coconut Oil
  • 3 Onions sliced thinly
  • 2 Green Chillies
  • Curry leaves a big handful
  • 4 cloves garlic chopped
  • 1 "  ginger chopped
  • 2 tablespoon Black pepper powder
  • 2 tablespoon Fennel Seeds 

Method:
  • First add  ginger garlic paste to cook for a min.
  • Add in salt and mix well.
  • Now add in all masala powder and continue roasting.
  • Allow to cool and grind adding very little water.
  • Add oil  in a pressure cooker and add the masala paste and stir for 5 minutes .add the beef cubes , Cook for 5 to 6 whistle, simmer for 10 mins. Now turn off the heat and let the steam go all by itself. Open the cooker and set aside.
  • Take a wok and add the coconut oil .
  • Fry the coconut chips curry leaves for 2 minutes.
  • Add all the rest ingredients mentioned roasted list , above . except for the pepper powder.
  • Add the mutton with the masala and let it simmer till it dries up completely.
  • Add the pepper powder at this stage .
  • Serve hot once it's done with garnished corriander leaves.

Beef millagu curry



Beef millagu curry is as the name says it all,is a recipe from coorg . Cubed beef along with  red chilli powder and beef masala powder is coated well and marinated for half hour . Not much hassle and you will get a perfect  aromatic beef curry cooked up at a nick of time. 

To tell you the truth my beef curry never turns good even after so much trials. "Aj always complains beef tastes like boiled meat ." Ummande curry kootyal mathi avulla " ( can't get enough of (his) mom's curry ..) i had to admit his mom prepares better than me .. That's when our neighbour  jumps into the story ... she fell sick one day and my mom gave a little of our curry to her .. next day her kid came over to return the pot and she frankly said "itha beef curry theere sherryattilla!!" ( beef curry was not tasty ) . Well mom was a bit taken aback ..by her honesty... hehe she did say the truth though .. immediately her mom came over ... still recovering  and apologized for her daughters remarks ... and to our surprise  she also said we dont know how to prepare  beef...


Now My mom who was despirate  to learn their recipe and she asked her to come over and prepare dinner for us ... and she kindly excepted ... beef millagu curry and porottas... the best combo ..
And when Aj sat down for dinner . He went staright to the kitchen to see if i had really made the curry ..
So here's the recipe that changed my ranking in the best beef curry list!

Ingredients


  • 1 kilo beef  , cleaned and cubed .
  • 4 large onions, sliced
  • 6 Garlic cloves crushed
  • 1'piece garlic crushed
  • 2 green chillies chopped
  • 1 large tomato , chopped 

        Marinating powders

  • 1/2 teaspoon turmeric powder
  • 1 teaspoon Garam Masala
  • 1 teaspoon Salt
  • 1 teaspoon beef masala  ( i used eastern )
  • 1 teaspoon pepper powder ( i used eastern pepper meat )
  • 1 teaspoon red chilli powder
  • 1 tablespoon coconut oil
  • 1 teaspoon red chilli powder
  • 1 teaspoon Garam Masala powder
  • 1 teaspoon corriander powder.
  • 1 teaspoon turmeric powder
       Tempering
  • 2 teaspoon Coconut oil
  • 2 teaspoon red chilli powder
  • 1 teaspoon corriander powder.
Method

  • Marinate the beef in all the powders for 20 minutes app.
  • Heat oil in cooker vessel .
  • Add the ginger garlic crush pastes and green chillies.  Saute for a minute .
  • Add the onions . Saute till it turns  pink in  colour
  • Add the powders and salt . Add the meat and tomatoes . Toss and mix well. 
  • Meanwhile in a small pan, heat the oil on low flame  and add the red chilli powder and corriander powders stir and off immediately  taking care not to burn the powders . Add to meat masala ,.
  • Add 1 cup water and cook for 30 minutes, after whistle goes on . Open and garnish with curry leaves and serve .
Note
There is not much gravy but it will be enough . Adding water will just bland the dish on the whole .
I cooked this beef for 5 whistles and  lowered the flame and cooked for 15 minutes.  You can cook 30 mimutes on low flame after the whistle goes on too.
